Hyde Park Village is getting ready to debut its latest concept, Forbici Modern Italian. The restaurant is crafted by Gigante Hospitality and is slated to open June 11.Executive Chef Jason Saldutti will be running the kitchen and is excited to create dishes with as many house-made ingredients as possible including their pizza dough, which takes 72 hours to make a single batch. In the coming weeks, Saldutti plans on having his kitchen integrate making pasta in-house as well. The full-service restaurant will be serving up a number of Roman-style pie varieties, Italian tapas, salads, grain bowls, and entrees. With craft brews, cocktails and wines are on tap, diners can also choose from house cocktails and a full wine list to sip on while surpassing their daily carb intake. Forbici will kick off serving up lunch and dinner with brunch offerings in the near future. The restaurant will be the only spot on the block serving up 'zas.
